Barley paste/Yegebs Siljo – Food from the Dramatic Ethiopia

Barley paste/Yegebs Siljo - Paste Yegebs Siljo is a well known dish during fasting. May be eaten with injera or bread. It is a vegetarian dish.

Equipment:
medium cooking pot
medium frying pan
medium mixing bowl
air-tight container

Ingredients:
4 cups barley flour
1 Tbsp. fenugreek
½ cup mustard powder
2 cups sunflower juice
½ cup garlic powder
½ cup ginger powder
¼ cup lemon juice
2-3 cups water
to taste salt

How to prepare Barley paste/Yegebs Siljo
Barley Powder – Soak barley seeds in water for about 1 hour. Drain the water and pass around on a clean cloth to dry for 2 to 3 hours in the sun. Roast lightly, grind into a fine powder and arranged aside.
Roast fenugreek over low heat. Grind to a fine powder and set aside.
Boil barley flour and fenugreek in 4 cups water until it thickens. Put into a bowl and allow to cool. Pour 1 cup chilly water on top fitting do not mix. When chilly , steadily pour off the water. Rubbing by hand, contribute mustard, garlic, and ginger powders. Add sunflower juice until mixture thickens. Add lemon juice and mix well. Pour into an air-right container and permit stand for three days beforeconsumption. Store in refrigerator. Yields 6-8 servings.
