Azifa is a vegetarian dish usually served during Lent. It is eaten with injera or bread or can be served with lettuce and tomatoes and cottage cheese for a light, diet snack.

Component:
1 ½ cups lentils
3 medium limes (juice from)
to taste salt
5 medium green peppers (chili Anaheim)
3 medium red onions (chopped)
½ tsp. black pepper
½ tsp. ginger powder
1 cup cooking oil
1 Tbsp. English mustard
How to fix Harmoniously blended with species/Azifa Pureed green lentils
Wash and boil lentils until they are soft. Drain the water and mash. Seed green peppers and cut them and the onions into small pieces. Mix the mashed lentils with oil, mustard and lime juice. Then contribute the green peppers, onions, ginger, salt and black pepper. Mix well and refrigerate. Serve cold because compelled. Azifa will not hang on to for too long. Yields 6-8 servings.
